Pineapple& Papaya Soup with Jasmine (Soup D’Ananas et De Papayes au Jasmin)

Pineapple& Papaya Soup with Jasmine (Soup D’Ananas et De Papayes au Jasmin)

This soup is an adaption of the French chef par excellence, Roger Vergé ‘s Soup de Melon et De Papayes au Jasmin from his book Cooking with Fruits. My dear friend lent me this book to browse – I was totally fascinated at how wonderfully he was able to make a mélange of recipes with fruits. This is a fantastic soup for all especially I believe my friends from South India who wear jasmines in their hair. The heady, intoxicating fragrance of the flower! I never thought that this could be used in cooking! Believe you me when I say that it infused the most exquisite bouquet to the soup and I felt in 7th heaven at having reproduced, albeit with some changes, this soup delicacy and wowed my family with it… please enjoy the pictures and the recipe and it is one you can certainly try in the south given the abundance of papayas and jasmines and pineapples too. Picture from the book 6 servings Preparation 20 minutes No cooking required Ingredients Zest of 1 lemon Juice of 2 limes ½ Pineapple 1 medium sized papaya ¾ cup sweet wine such as Sauternes (I subbed dark cherry juice) 1/3cup sugar 1 pinch of salt 36 very white jasmine flowers (you can sub this with few drops of orange blossom water when you are ready to serve) 6 sprigs of fresh mint White pepper, finely ground (I used black) Add caption Preparation Grate the lemon for the zest Peel, deseed and cube papayas Peel and dice pineapple Juice the limes Measure ¾ cup of cherry juice (you can sub with...
Oreo Beets

Oreo Beets

Oreo Beets This was a no brainer recipe but get this – We were attending the dress rehearsal of  my daughters who has a children’s role in an Opera close to home, conducted by a Maestro – The venue is incredibly beautiful and the little tent that sells some food incredibly expensive – So I ordered this beet salad – a couple of small beets slivered with some cheese in between – And they charged us a wicked $12 for it!!!!!!!!!!!!! Either they were or out of their minds or I was to even consider buying, let alone actually doing so. The lady’s quip, The goat cheese that is used is really expensive!! I named these Oreo Beets because when I first saw them at that tent, I thought they were selling Oreo cookies for dessert! (lol) The salad and the idea was good, no doubt, but I immediately resolved to make this for an entire family of 4 for way under $12 and that’s exactly what I did and two per person at that! I have no idea how they made this, but here is my take on it! This is a great party idea … A very cool and delicious, dressy, summer salad, this can be put on the table in 10 minutes flat, assuming you have beets and goat cheese in the house J It is a very Frenchy salad with deceptively small portions yet rich in flavors and quite filling. My sweetest hubby gifted me a Kitchen Aid Mixer – a Mother’s day gift which finally I picked, because mixers come in so many wonderful colors and it was difficult for me to choose – but i finally went with my favorite color – orange – and I’ve been meaning to test it our for a week – But now finally I got the time to do this and decided to go with a recipe that came with the mixer – These came out brilliantly and my friends who came over for dinner were totally appreciative of them… Isn’t it a great feeling when you follow a recipe and get it to look like the pictures shown?!! I certainly felt that satisfaction. Here is the recipe and the pics – mine and the ones from the recipe book for a comparison, just for fun (: Ingredients 4 ounces of lite cream cheese ¾ cup of all purpose flour + 1tsp 8 ounces of roughly chopped mushrooms 1 cup of chopped green onions (spring onions) 1 egg ½ cup of grated Swiss cheese 1 tbsp butter ( I used a garlic & herb infused butter) 1 tbsp olive oil for sautéing Preparation With a mixer (for without do like you would any baked item) Add the cream cheese and butter and whip for 1 minute using the flat beater on level 4 Scrape off the sides and add the flour and blend for another minute or until the batter starts coming together on level 6 Remove and make a ball and refrigerate for 1 hour In the...
